
With its cold winds blustering outside, winter is the season when the taste of fresh oysters becomes more inviting. January, in particular, is the time when the flesh of oysters swells to its plumpest, tastiest, most aromatic and nutritious. In the West, people are told to eat oysters during months whose names contain the letter “r,* and as the months of September through March all have that letter in their names, the cold winter months in particular feature the most delectable oysters.
