The government of Seoul selects restaurants that have met certain qualifications and names them "Korean Restaurants that Seoul is Proud of." After a checklist of selection criteria was carefully compiled by 12 specialists in food studies, citizen organizations and food-related organizations, only 131 establishments made the cut. Included on the checklist was whether the kitchens used environmentally friendly ingredients and if they stuck to traditional recipes. Service, size, interior and exterior design, and cleanliness were also taken into account.
